  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil, divided
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 large sweet potato, peeled and diced into 0.5-inch cubes
  • 1 tablespoon olive oil
  • 1 cup long-grain white rice or brown rice
  • 2 cups chicken or vegetable broth
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Toss diced sweet potato with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, tossing halfway, until tender and caramelized.
  2. Rinse rice under cold water. In a saucepan, combine rice and broth. Bring to a boil, reduce heat to low, cover, and simmer for 15-18 minutes. Remove from heat and let sit, covered, for 5 minutes before fluffing.
  3. In a dish, whisk together 2 tbsp olive oil, soy sauce, honey, garlic, paprika, cumin, salt, and pepper. Add chicken and marinate for at least 10 minutes.
  4. Heat remaining 1 tbsp oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until cooked through. Transfer to a cutting board and let rest for 5-10 minutes, then slice or shred.
  5. Divide rice among bowls. Top with roasted sweet potatoes, sliced chicken, avocado, green onions, and cilantro. Serve with lime wedges.
