  • 4 ripe but firm peaches, halved and pitted
  • 2 tablespoons melted butter or coconut oil
  • 2 tablespoons brown sugar or honey
  • 1 teaspoon vanilla extract
  • Pinch of cinnamon or nutmeg (optional but lovely)
  • High quality vanilla ice cream for serving
  • Optional toppings: chopped nuts, granola, fresh mint, balsamic glaze, or whipped cream

Instructions

  1. Preheat your grill to medium high heat (375-400 degrees Fahrenheit). Clean the grate and ensure steady heat.
  2. Cut each peach in half along the seam and twist to separate. Remove the pit. Brush the cut sides with melted butter or coconut oil, then sprinkle with brown sugar and a touch of vanilla. Add a pinch of cinnamon if desired.
  3. Place the peaches cut side down on the grill grates. Cook undisturbed for 3 to 4 minutes until grill marks form and sugar caramelizes. Flip and cook for another 2 to 3 minutes on the skin side until tender but not falling apart.
  4. Transfer the warm peaches to serving bowls. Top each with a generous scoop of vanilla ice cream. Serve immediately so the ice cream melts into the warm fruit.
  5. For extra flavor, brush with balsamic glaze or honey before serving. Add optional toppings like chopped nuts, granola, or fresh mint.

Notes

Choose peaches that are ripe but firm; overly ripe peaches will turn mushy. Do not move the peaches around once on the grill to get good char marks. For dairy free, use coconut oil and dairy free ice cream. For a lower carb option, serve with whipped cream or Greek yogurt instead of ice cream.
