This recipe delivers perfectly grilled salmon with a savory, caramelized crust and a moist, flavorful interior. A bright lemon and fresh herb marinade creates a light yet satisfying meal that is quick enough for a weeknight but special enough for guests.

  • 4 (6-ounce) salmon fillets, about 1-inch thick, skin-on or skinless
  • 2 large lemons
  • 1/4 cup finely chopped fresh dill
  • 1/4 cup finely chopped fresh parsley
  • 3 cloves garlic, minced
  • 1/3 cup extra-virgin olive oil, plus extra for the grill
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon dried oregano (optional)

Instructions

  1. Make the marinade. In a medium bowl, whisk together the olive oil, juice and zest of 1 lemon, minced garlic, chopped dill and parsley, salt, pepper, and oregano if using.
  2. Marinate the salmon. Place salmon fillets in a shallow dish or large resealable bag. Pour marinade over them, turning to coat. Let sit at room temperature for 15 to 30 minutes.
  3. Preheat and oil the grill. Preheat grill to medium-high heat (about 400°F). Clean grates thoroughly, then oil them generously with a folded paper towel dipped in oil.
  4. Grill the salmon. Place salmon fillets on the hot grill, presentation-side first. Grill for 4 to 6 minutes, until grill marks form and the bottom releases easily. Carefully flip and cook for another 4 to 6 minutes, until salmon is opaque and flakes easily, or until a digital thermometer reads 125-130°F for medium.
  5. Rest and serve. Transfer grilled salmon to a platter. Squeeze juice from the remaining lemon over the top and garnish with extra fresh herbs. Let rest for 3 to 5 minutes before serving.

Notes

Do not marinate for more than 30-60 minutes as the acid can affect the texture. Ensure the grill grates are very clean and well-oiled to prevent sticking. Salmon will continue to cook as it rests, so remove it just before it is done to your liking.
