  • 6 ears fresh corn, husked
  • 1 pint cherry tomatoes, halved
  • 1 can black beans, drained and rinsed
  • 4 ounces crumbled feta cheese
  • 1/2 cup fresh basil, chopped
  • 1/4 cup red onion, finely diced
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat. Place husked corn directly on grates and grill, turning every 3-4 minutes, until charred on all sides, about 12-15 minutes. Let cool slightly.
  2. Stand each ear of corn upright on a cutting board and use a sharp knife to cut kernels off the cob.
  3. In a large bowl, combine grilled corn kernels, cherry tomatoes, black beans, crumbled feta, fresh basil, and red onion. Toss gently.
  4. In a small bowl, whisk together olive oil, lime juice, smoked paprika, salt, and pepper. Pour dressing over salad and toss again.
  5. Let salad sit for 10 minutes before serving to allow flavors to meld. Adjust seasoning if needed.

Notes

For dairy-free, omit feta or use a plant-based alternative. If fresh corn is unavailable, use canned corn and char in a cast iron skillet. Store leftovers in an airtight container in the refrigerator for up to 3 days. Refresh with a splash of lime juice before serving.
