These Green Velvet Cake Squares are a simple, one-pan wonder. They deliver all the nostalgic charm of classic red velvet with a playful, festive green twist, perfect for satisfying a sweet craving or as a fun treat for any gathering.

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • Green gel food coloring
  • 1 teaspoon white vinegar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, whisk the eggs until lightly beaten. Whisk in the oil, buttermilk, vanilla, and green food coloring until a deep emerald green is achieved.
  4. Gradually add the dry ingredients to the wet ingredients, mixing with a spatula just until combined. Stir in the white vinegar.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the pan cool on a wire rack for at least 1 hour before slicing into squares.

Notes

For best results, use gel food coloring for a vibrant hue and do not overmix the batter. The cake must cool completely for clean cuts. No buttermilk? Mix 1 cup milk with 1 tablespoon vinegar or lemon juice and let sit for 5 minutes.
