A playful and delicious twist on classic deviled eggs inspired by the beloved Dr. Seuss story. These creamy, savory eggs get their vibrant green color from food coloring and are filled with finely diced ham for a fun and protein-packed snack that kids and adults will love.

Ingredients

  • 12 large eggs
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar or fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 2-3 drops green food coloring
  • 1/4 cup finely diced ham
  • Paprika or extra diced ham, for garnish

Instructions

  1. Place eggs in a single layer in a saucepan. Cover with cold water by 1 inch. Bring to a full boil over high heat.
  2. Once boiling, immediately cover the pot, remove from heat, and let sit for 12 minutes. Transfer eggs to a bowl of ice water to cool completely.
  3. Once cool, gently tap and roll eggs on counter to crack shells, then peel under cool running water. Slice each egg in half lengthwise.
  4. Carefully remove yolks and place them in a medium bowl. Arrange the empty egg white halves on a serving plate.
  5. To the yolks, add mayonnaise, Dijon mustard, vinegar, garlic powder, onion powder, salt, and pepper. Mash and stir with a fork until completely smooth.
  6. Add 2-3 drops of green food coloring to the yolk mixture. Stir vigorously until the color is uniform.
  7. Gently fold the finely diced ham into the green yolk mixture.
  8. Spoon or pipe the filling into the egg white cups. Garnish each with a sprinkle of paprika or a few extra ham bits before serving.

Notes

For a natural green color, blend a handful of fresh spinach with the mayonnaise before mixing with yolks. For best texture, chill filled eggs for 30 minutes before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
