These overnight oats taste like a lemon poppy seed muffin but are far more nutritious. They are packed with protein, fiber, and healthy fats for a satisfying breakfast that keeps you full for hours.

Ingredients

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup plain Greek yogurt
  • 1/2 cup milk of choice
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh lemon zest
  • 1 tsp poppy seeds
  • 1-2 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Combine all ingredients in a medium bowl or jar.
  2. Stir thoroughly until completely combined and no streaks of yogurt remain.
  3. Taste and adjust sweetness if desired.
  4. Cover and refrigerate for at least 4 hours, or overnight.
  5. Stir well before eating. Add a splash of milk if a looser consistency is preferred.
  6. Add toppings and enjoy cold.

Notes

For best texture, use old fashioned rolled oats. Do not skip the lemon zest for maximum flavor. Can be stored in the refrigerator for 4-5 days.
