These handheld cheeseburger bombs are the ultimate game day snack. A juicy beef and cheese filling is sealed inside biscuit dough, baked until golden, and brushed with a savory garlic-Parmesan butter. They are easy, shareable, and packed with flavor.

  • 1 pound ground beef (80/20 blend)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 6 slices melty cheese (American, cheddar, or pepper jack), each cut into 4 squares
  • 1 (16 oz) can refrigerated biscuit dough (8 count)
  • ¼ cup (½ stick) unsalted butter, melted
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley flakes

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess grease.
  3. Stir in minced garlic, Worcestershire sauce, oregano, smoked paprika, salt, and pepper. Cook 1 minute. Remove from heat and let cool slightly.
  4. Separate biscuit dough and flatten each into a 4-5 inch round.
  5. Place a cheese square in the center of each dough round. Top with a heaping tablespoon of the cooled beef mixture.
  6. Gather dough edges over the filling and pinch tightly to seal. Place seam-side down on the prepared baking sheet.
  7. In a small bowl, mix melted butter, grated Parmesan, garlic powder, and dried parsley. Brush generously over each bomb.
  8. Bake for 15-18 minutes until dough is puffed and golden brown. Let cool 2-3 minutes before serving.

Notes

Let the beef filling cool slightly before assembling to prevent soggy dough. Seal the dough tightly to lock in steam and prevent leaks. For a crispier bottom, bake in a preheated cast iron skillet.
