A simple, one-pan weeknight dinner featuring juicy, seared pork chops and crisp-tender green beans all cooked in a rich, aromatic garlic butter sauce. This 30-minute meal delivers restaurant-level flavor with minimal effort and cleanup. Perfect for a comforting, family-friendly dinner.

  • 4 boneless pork chops, about 1-inch thick
  • 1 pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Pat pork chops dry with paper towels. In a small bowl, mix paprika, thyme, onion powder, 1 tsp salt, and ½ tsp pepper. Rub mixture evenly over both sides of each pork chop.
  2. Heat a large, heavy skillet over medium-high heat. Add 1 tbsp olive oil. Once shimmering, add pork chops. Sear without moving for 4-5 minutes per side until a golden-brown crust forms. Remove chops to a plate.
  3. In the same skillet, add remaining 1 tbsp olive oil. Add green beans and sauté for 4-5 minutes, stirring occasionally, until vibrant and slightly blistered. Season with a pinch of salt and pepper.
  4. Push green beans to the sides of the pan. Reduce heat to medium-low. Add 2 tbsp butter to the center. Once melted, add minced garlic and cook for 30-60 seconds, stirring constantly, until fragrant.
  5. Nestle seared pork chops back into the skillet on top of the green beans. Place a small pat (about ½ tbsp) of the remaining butter on top of each pork chop.
  6. Cover the skillet with a lid and cook for 5-8 minutes, or until pork chops reach 145°F internally and green beans are tender-crisp. Spoon the garlic butter sauce over everything. Garnish with parsley and serve with lemon wedges.

Notes

For bone-in chops, add a few minutes to cook time. Do not crowd the pan when searing. Use a meat thermometer to avoid overcooking. Frozen green beans can be used; pat them very dry first.
