These Frozen Yogurt Granola Cups are a cool, creamy, and crunchy treat perfect for a quick snack or breakfast. They require no baking and can be customized with your favorite mix-ins. Make a batch ahead for a wholesome, protein-packed option ready from the freezer.

  • 2 cups old-fashioned rolled oats
  • 1/2 cup creamy nut butter (e.g., almond or peanut butter)
  • 1/3 cup pure maple syrup or honey
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine sea salt
  • 1 1/2 cups plain Greek yogurt
  • 2-3 tablespoons maple syrup or honey, to taste
  • 1 teaspoon vanilla extract

Instructions

  1. Line a 12-cup muffin tin with paper or silicone liners.
  2. In a medium bowl, combine oats, nut butter, 1/3 cup maple syrup, melted coconut oil, 1 tsp vanilla, and salt. Mix until oats are fully coated and mixture holds together when pinched.
  3. Divide the granola mixture evenly among the muffin cups. Firmly press the mixture into the bottom and up the sides of each liner to form a cup shape.
  4. In a separate bowl, whisk together Greek yogurt, 2-3 tbsp maple syrup, and 1 tsp vanilla until smooth.
  5. Spoon the yogurt filling into each granola cup, smoothing the tops. Add optional toppings if desired.
  6. Place the muffin tin in the freezer for at least 2 hours, or until the yogurt is completely firm.
  7. Once frozen, remove cups from the tin. Store in a freezer-safe container. Let sit at room temperature for 5-10 minutes before serving.

Notes

For a gluten-free version, use certified gluten-free oats. For a dairy-free/vegan version, use a thick plant-based yogurt and maple syrup. Ensure you press the granola crust firmly to prevent crumbling. Use thick Greek yogurt for best results.
