These frozen fruit bars are a healthy and refreshing summer treat made with fresh strawberries, mango, and pineapple. They are naturally sweetened with honey and packed with vitamin C, making them a perfect guilt-free dessert or snack for all ages.

Ingredients

  • 3 cups fresh or frozen strawberries, hulled
  • 1 cup fresh or frozen mango chunks
  • 1 cup fresh or frozen pineapple chunks
  • 2 tablespoons fresh lime juice
  • 2 to 3 tablespoons honey or maple syrup
  • 1 cup coconut water or plain water

Instructions

  1. Wash and prepare fresh fruit: hull strawberries, peel and chop mango, peel and core pineapple. If using frozen fruit, skip this step.
  2. Add all ingredients to a high-speed blender: strawberries, mango, pineapple, lime juice, honey, and coconut water.
  3. Blend on low then high for about 60 seconds until completely smooth. Taste and adjust sweetness with more honey if needed.
  4. Pour the mixture into popsicle molds, leaving a quarter inch of space at the top for expansion. If using paper cups, fill three-quarters full, cover with foil, and insert a popsicle stick through the foil.
  5. Tap molds gently on the counter to release air bubbles.
  6. Freeze on a flat surface for at least 4 hours, preferably overnight, until solid.
  7. To unmold, run the molds under warm water for about 10 seconds, then gently pull the bars out. Serve immediately.

Notes

For a creamier texture, replace half the coconut water with full-fat coconut milk. For lower sugar, reduce honey to 1 tablespoon or omit if fruit is very ripe. Store wrapped bars in a freezer bag for up to 3 months.
