  • 1 pint fresh strawberries, hulled
  • 1 cup fresh pineapple chunks
  • 1-2 ripe bananas, sliced into 1-inch rounds
  • 1 cup fresh blueberries
  • 6-8 wooden skewers (6-inch)
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Wash and thoroughly dry all fruit. Pat berries gently with a paper towel. Slice strawberries if large and bananas into rounds.
  2. Thread fruit onto skewers in a pattern, leaving space at the bottom as a handle. Place finished skewers on a parchment-lined tray.
  3. Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second bursts, stirring well after each, until smooth and glossy (about 60 seconds total).
  4. Hold a skewer over the bowl and use a spoon to drizzle melted chocolate back and forth over the fruit. Return to the parchment-lined tray.
  5. Let chocolate set at room temperature for 15-20 minutes, or refrigerate for 5-7 minutes to speed up the process. Serve immediately.

Notes

Ensure fruit is completely dry to prevent chocolate from seizing. For best results, assemble close to serving time. Use dairy-free chocolate for a vegan option. Fruit can be prepped ahead and stored separately in the fridge.
