  • 8 ounces dried noodles (like lo mein, rice noodles, or spaghetti)
  • 1 tablespoon neutral oil (like avocado or vegetable)
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 medium carrots, julienned or cut into matchsticks
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2-3 green onions, sliced (for garnish)
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tablespoons oyster sauce (or vegetarian oyster sauce)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Prep everything. Cook noodles according to package directions until al dente. Drain, rinse with cool water, and toss with a little oil to prevent sticking. Whisk all sauce ingredients in a small bowl. Slice all vegetables.
  2. Stir fry the veggies. Heat a large wok or skillet over high heat. Add the oil. Once shimmering, add onion, bell pepper, carrots, and broccoli. Stir-fry for 4-5 minutes until bright and crisp-tender.
  3. Build the flavor. Push veggies to the side. Add minced garlic and ginger to the center of the pan. Let sizzle for 30 seconds until fragrant.
  4. Combine and sauce. Add the cooked noodles and prepared sauce to the pan. Using tongs, toss everything together vigorously for 2-3 minutes until the sauce thickens and coats everything.
  5. Finish and serve. Remove from heat. Drizzle with the toasted sesame oil and toss once more. Garnish with sliced green onions. Serve immediately.

Notes

Do not overcrowd the pan; cook in batches if needed. Have all ingredients prepped before heating the wok. For added protein, toss in tofu, shrimp, or thinly sliced meat with the vegetables in step 2.
