This easy ham and cheese quiche is a versatile and comforting dish perfect for any meal. It features a flaky crust filled with a rich, savory custard of eggs, cream, diced ham, and freshly grated cheese, all enhanced with a hint of nutmeg. The key to its silky texture is grating your own cheese from a block, avoiding the anti-caking agents in pre-shredded varieties.

  • 1 9-inch unbaked pie crust
  • 1 large egg white, lightly beaten
  • 6 large eggs
  • 1 cup heavy cream or half-and-half
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups diced cooked ham (about 8 ounces)
  • 1 1/2 cups shredded cheese (from an 8-ounce block of Gruyère, Swiss, or sharp cheddar)
  • 1/3 cup finely diced yellow onion
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375°F (190°C). Fit pie crust into a 9-inch pie plate, crimp edges, and prick bottom and sides with a fork. Brush entire inner surface with beaten egg white. Set aside.
  2. In a small skillet over medium heat, melt butter. Add diced onion and cook for 4-5 minutes until softened and translucent. Let cool slightly.
  3. In a large mixing bowl, whisk eggs, cream, milk, salt, pepper, and nutmeg until smooth and homogenous.
  4. Stir in diced ham, freshly grated cheese, and the slightly cooled sautéed onions.
  5. Carefully pour the egg mixture into the prepared crust. Place quiche on a baking sheet.
  6. Bake for 45-50 minutes, until the center is just set and the top is golden brown. A knife inserted near center should come out clean.
  7. Let quiche rest on a wire rack for at least 15-20 minutes before cutting and serving.

Notes

For best texture, grate cheese from a block. Letting the quiche rest is crucial for clean slices. Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months. For a crustless version, butter the pie plate and pour filling directly in; bake time may reduce slightly.
