These stunning Easter treats are simple to make and perfect for a festive dessert. Fresh strawberries are dipped in chocolate, rolled in green-tinted coconut to form a nest, and topped with candy eggs. They come together in under 30 minutes with no special skills required.

  • 1 pound fresh strawberries, washed and thoroughly dried
  • 10 ounces high-quality chocolate chips or melting wafers (dark, milk, or semi-sweet)
  • 1 teaspoon coconut oil or vegetable shortening (optional)
  • 1 cup sweetened shredded coconut
  • Green food coloring (gel or liquid)
  • 1 tablespoon water
  • 36-40 candy-coated chocolate eggs (like mini Cadbury eggs)

Instructions

  1. Prepare the Coconut Nests. In a small zip-top bag or bowl, combine shredded coconut, green food coloring, and water. Seal and massage or stir until color is even. Spread on a plate to air-dry for a few minutes.
  2. Melt the Chocolate. Place chocolate (and coconut oil, if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring after each, until smooth and fluid. Do not overheat.
  3. Dip the Strawberries. Holding a strawberry by the stem, dip it into melted chocolate about three-quarters of the way up. Let excess drip off. Immediately roll the dipped top in the green coconut to coat. Place on a parchment-lined baking sheet.
  4. Form the Nests & Add Eggs. Gently shape the coconut on each strawberry into a little cup or nest. Place 3-4 mini chocolate eggs into each nest.
  5. Set and Serve. Let set at room temperature or refrigerate for 10 minutes until chocolate is firm. Serve immediately.

Notes

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing. Gel food coloring gives vibrant color without extra moisture. For best results, use chocolate melting wafers as they set with a nice snap. Store leftovers in a single layer in an airtight container in the fridge for up to 2 days.
