  • 1 pound fresh strawberries with stems, washed and thoroughly dried
  • 10 ounces high-quality chocolate melting wafers or chopped chocolate bars (semi-sweet, dark, milk, or white)
  • 1 teaspoon coconut oil or vegetable shortening (optional, for thinning chocolate)
  • 1 cup white chocolate melting wafers
  • Pink candy melts or a tiny drop of pink food coloring gel
  • Small round sprinkles or black edible marker for eyes
  • Pastel sprinkles, crushed freeze-dried strawberries, or finely chopped nuts for decorating (optional)

Instructions

  1. Prepare strawberries by washing and patting completely dry with paper towels. Leave stems intact. Line a baking sheet with parchment paper.
  2. Make bunny ears: Melt white chocolate wafers in a microwave-safe bowl in 20-second bursts, stirring until smooth. Transfer most to a piping bag. To the remaining chocolate, add pink candy melt or pink gel and stir until uniform pink.
  3. Pipe small teardrop-shaped white bunny ears onto a separate parchment-lined tray. Use pink chocolate to add a smaller inner ear. Let set completely at room temperature or refrigerate for 10 minutes.
  4. Melt main chocolate (and optional coconut oil) in a microwave-safe bowl using 20-second bursts, stirring until smooth.
  5. Hold a strawberry by its stem and dip into melted chocolate, swirling to coat about three-quarters up. Let excess drip off, then place on prepared baking sheet.
  6. While chocolate is still wet, gently press two set bunny ears into the top. Add sprinkle eyes or draw with edible marker. Add optional decorations like sprinkles.
  7. Repeat with remaining strawberries. Let set at cool room temperature until chocolate is firm, about 45 minutes to 1 hour. Do not refrigerate unless kitchen is very warm.

Notes

Ensure strawberries are completely dry to prevent chocolate from seizing. Bunny ears can be made up to 3 days ahead and stored in a cool, dry place. Best enjoyed the day they are made. Store leftovers in a single layer in an airtight container in the refrigerator for 1-2 days.
