Ingredients

Scale

16 ounces whole-milk ricotta cheese
1/4 cup extra-virgin olive oil, plus more for drizzling
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 small garlic clove, finely minced or grated
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt, plus more to taste
1/4 teaspoon freshly cracked black pepper
2 tablespoons finely chopped fresh herbs (such as basil, chives, parsley)
1/4 cup honey
1/2 to 1 teaspoon red pepper flakes (adjust for heat)
A pinch of flaky sea salt
Crusty bread, toasted baguette slices, or fresh vegetables for serving

Instructions

In a small saucepan, combine honey and red pepper flakes. Warm over low heat for 3-5 minutes, stirring occasionally, until fragrant. Do not boil. Remove from heat and let cool slightly.
In a medium bowl, combine ricotta, olive oil, lemon juice, lemon zest, minced garlic, 1/4 teaspoon red pepper flakes, salt, and black pepper. Whip with a fork or whisk until smooth.
Fold in the chopped fresh herbs. Taste and adjust seasoning with more salt or lemon if needed.
Spread the ricotta mixture onto a serving plate or into a shallow bowl. Use the back of a spoon to create swirls and divots.
Drizzle the cooled hot honey generously over the ricotta. Finish with an extra drizzle of olive oil and a sprinkle of flaky sea salt and fresh herbs.
Let the dip sit at room temperature for 10-15 minutes before serving with crusty bread, toasted baguette, or fresh vegetables.

Notes

For best flavor, use high-quality whole-milk ricotta. Let the dip come to room temperature before serving to enhance texture and taste. Store leftovers in an airtight container in the refrigerator for up to 3 days; ricotta base and hot honey are best stored separately.
