  • For the Simple Berry Syrup:
  • 1 cup fresh or frozen mixed berries (strawberries, raspberries, blackberries)
  • 1 cup granulated sugar
  • 1 cup water
  • For Each Mocktail:
  • 2 tablespoons fresh lemon juice (about 1 medium lemon)
  • 1.5 to 2 tablespoons cooled berry syrup
  • Ice cubes
  • 0.75 cup chilled sparkling water or club soda
  • Fresh berries and a lemon slice, for garnish

Instructions

  1. Make the Berry Syrup: In a small saucepan, combine berries, sugar, and water. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Simmer for 8-10 minutes, gently mashing berries. Remove from heat and steep for 10 minutes.
  2. Strain and Cool: Pour syrup through a fine-mesh strainer into a bowl, pressing on solids to extract liquid. Discard solids. Let syrup cool to room temperature, then refrigerate in a jar until chilled.
  3. Assemble the Mocktail: Fill a tall glass with ice. Add fresh lemon juice and 1.5 tablespoons of chilled berry syrup. Stir well to combine.
  4. Top with chilled sparkling water. Stir gently once to integrate.
  5. Garnish with fresh berries and a lemon slice. Serve immediately.

Notes

The berry syrup can be made up to 2 weeks ahead and stored in the refrigerator. For a sugar-free version, use a 1:1 sugar substitute like monk fruit. Always use fresh lemon juice, not bottled, for the best flavor. Add sparkling water last and stir gently to preserve bubbles.
