Crockpot Hashbrown Casserole

A creamy, cheesy, and protein-packed comfort food made easy in the slow cooker. This set-and-forget casserole is perfect for busy weeknights, lazy Sundays, or feeding a crowd at a potluck.

  • 1 (30 oz) bag frozen shredded hash browns
  • 1 lb lean ground turkey or chicken sausage
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Cooking spray or butter for greasing

Instructions

  1. Brown the ground turkey or sausage with the diced onion in a skillet over medium heat until the meat is cooked through and the onion is soft. Add the minced garlic in the last minute of cooking. Drain any excess grease.
  2. In a large mixing bowl, combine the condensed soup, sour cream, 1 cup of the shredded cheddar cheese, broth, smoked paprika, garlic powder, and onion powder. Stir until smooth.
  3. Add the frozen hash browns and the cooked meat mixture to the bowl with the creamy base. Gently fold everything together until well combined. Season with salt and pepper.
  4. Lightly grease the insert of a 6-quart or larger slow cooker with cooking spray or butter.
  5. Transfer the hashbrown mixture to the prepared slow cooker, spreading it into an even layer. Sprinkle the remaining 1/2 cup of cheese evenly over the top.
  6. Cover and cook on HIGH for 3-4 hours or on LOW for 6-7 hours. The casserole is done when the edges are bubbly and the center is hot.

Notes

Do not thaw the hash browns. For a golden top, remove the lid for the last 30 minutes of cooking or broil for 2-3 minutes if the crockpot insert is oven-safe. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
