This is the ultimate set-it-and-forget-it comfort food. Smoky sausage, tender potatoes, and a creamy, cheesy sauce come together effortlessly in your slow cooker for a family-friendly meal that feels like a warm hug.

  • 2 pounds russet potatoes, peeled and diced into 1-inch cubes
  • 1 (14-ounce) package smoked sausage (kielbasa), sliced into 1/2-inch rounds
  • 1 medium yellow onion, diced
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup whole milk or chicken broth
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fresh chopped parsley or chives for garnish (optional)

Instructions

  1. Lightly grease a 6-quart or larger slow cooker with cooking spray or butter.
  2. In a large bowl, combine the diced potatoes, sliced sausage, and diced onion.
  3. In a separate medium bowl, whisk together the condensed soup, sour cream, milk or broth, melted butter, garlic powder, smoked paprika, black pepper, and salt until smooth.
  4. Pour the creamy sauce over the potato mixture and stir until everything is evenly coated.
  5. Transfer the mixture to the prepared slow cooker and spread into an even layer.
  6. Cover and cook on HIGH for 3.5 to 4 hours, or on LOW for 6 to 7 hours, until potatoes are fork-tender.
  7. About 30 minutes before the end of cooking, sprinkle 1 1/2 cups of the shredded cheese evenly over the top. Recover and cook for the remaining time.
  8. Once done, stir gently to incorporate the melted cheese. Serve hot, garnished with the remaining 1/2 cup of cheese and optional fresh herbs.

Notes

Do not add all the cheese at the beginning; adding most of it in the last 30 minutes ensures a perfect melted layer. Taste before adding extra salt, as the sausage and soup are already salty. For a lighter version, use turkey sausage and low-fat dairy.
