  • 1.5 pounds boneless, skinless chicken breasts (about 2 large)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk or water
  • 1.5 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/4 cup neutral oil (avocado, canola, or light olive oil)

Instructions

  1. Preheat oven to 425°F (220°C). Place a large rimmed baking sheet inside to heat.
  2. Slice chicken breasts horizontally into thin cutlets or pound to 1/2-inch thickness. Pat completely dry with paper towels. Season both sides with salt, pepper, garlic powder, and paprika.
  3. Set up breading station: Place flour in first shallow dish. Whisk eggs with milk in second dish. In third dish, combine panko, Parmesan, Italian seasoning, and onion powder.
  4. Dredge each cutlet in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press firmly into breadcrumb mixture to coat both sides. Place on a wire rack or plate.
  5. Carefully remove hot baking sheet from oven. Pour oil onto sheet and tilt to coat. Arrange breaded cutlets in a single layer on the hot oil.
  6. Bake for 10 minutes. Carefully flip cutlets with tongs. Bake for another 8-12 minutes, until internal temperature reaches 165°F and coating is golden brown and crisp.
  7. Let cutlets rest on baking sheet for 5 minutes before serving. Optionally, squeeze with lemon juice and sprinkle with parsley.

Notes

For crispiness, pat chicken dry and use a preheated baking sheet. For gluten-free, use gluten-free flour and panko. For dairy-free, omit Parmesan. Leftovers reheat best in an oven or toaster oven to retain crispness.
