This one-pan wonder is a cozy, flavor-packed dinner that feels special yet comes together with minimal fuss. Tender chicken simmers in a rich, garlicky cream sauce with sun-dried tomatoes and fresh spinach, making it a perfect easy family meal.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely diced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup fresh spinach, roughly chopped
  • 1 1/2 cups heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil (or 1 tbsp fresh)
  • Salt and pepper to taste

Instructions

  1. Pat chicken pieces dry and toss with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes until golden and cooked through. Remove to a plate.
  3. Reduce heat to medium. Add diced onion to the skillet and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the heavy cream, stirring to scrape up browned bits. Simmer gently for 2-3 minutes to thicken slightly.
  5. Stir in the grated Parmesan cheese until melted and smooth.
  6. Add sun-dried tomatoes, spinach, and dried basil to the sauce. Stir until spinach wilts, about 1-2 minutes.
  7. Return the cooked chicken and any juices to the skillet. Stir everything together and heat through for 2-3 minutes. Taste and adjust seasoning.

Notes

For a lighter sauce, use half-and-half. If sauce is too thick, add a splash of chicken broth or milk. For best results, grate your own Parmesan from a block. Leftovers reheat beautifully.
