This one-skillet Creamy Tuscan Chicken is a nourishing and deeply flavorful weeknight meal. Tender chicken is seared and simmered in a luscious garlicky cream sauce with sun-dried tomatoes and spinach. It’s restaurant-quality comfort food that’s simple to make at home.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 4-5 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes in oil, drained and chopped
  • 2 cups fresh baby spinach
  • 1 1/2 cups heavy cream or half-and-half
  • 1 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season on both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side until golden and cooked through. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add diced onion and cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2 minutes.
  5. Stir in heavy cream and bring to a gentle simmer. Cook for 3-4 minutes to thicken slightly.
  6. Reduce heat to low. Gradually whisk in grated Parmesan cheese until the sauce is smooth and creamy.
  7. Stir in chopped sun-dried tomatoes and fresh spinach until spinach wilts.
  8. Return seared chicken breasts to the skillet, spooning sauce over them. Heat through for 2-3 minutes. Sprinkle with red pepper flakes if using. Serve immediately.

Notes

For a golden sear, ensure chicken is completely dry before seasoning. Use freshly grated Parmesan for a smooth sauce; pre-grated cheese can make it grainy. The sauce may thicken upon standing; thin with a splash of broth or cream if needed. For a dairy-free version, substitute full-fat coconut milk for the cream and use a vegan Parmesan alternative.
