  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil or butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups long-grain white rice (like Jasmine or Basmati)
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken pieces with salt, pepper, paprika, and thyme. Heat oil in a large, deep skillet over medium-high heat. Brown chicken for 5-7 minutes, then remove to a plate.
  2. In the same skillet, add diced onion and cook for 3-4 minutes until soft. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add dry rice to the skillet and stir constantly for 2 minutes to toast lightly.
  4. Pour in chicken broth, scraping up browned bits. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes without peeking.
  5. After 15 minutes, stir in heavy cream, cheddar, and Parmesan cheeses. Return the browned chicken and any juices to the skillet. Gently fold everything together.
  6. Cover the skillet again and cook on low for another 5-7 minutes to thicken the sauce and finish cooking the chicken.
  7. Turn off heat and let the skillet sit, covered, for 5 minutes to allow flavors to meld. Garnish with fresh parsley before serving.

Notes

For a dairy-free version, use full-fat coconut milk and dairy-free cheese. Do not lift the lid while the rice is steaming. Freshly grated cheese melts better than pre-shredded. Letting the dish rest before serving is crucial for the best texture.
