This one-pan wonder delivers silky, comforting pasta in just 30 minutes. Toasted orzo simmers in a garlicky broth and cream for a luxurious sauce, finished with fresh spinach and Parmesan. It’s the perfect cozy meal for busy weeknights.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 small yellow onion, finely diced
  • 5-6 cloves garlic, minced
  • 1 ½ cups uncooked orzo pasta
  • 3 cups low-sodium chicken broth or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 5 ounces fresh baby spinach
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. In a large skillet or Dutch oven, heat olive oil and 2 tablespoons butter over medium heat. Add onion and cook until soft, about 4-5 minutes. Add garlic and cook for 30 seconds until fragrant.
  2. Add remaining 2 tablespoons butter and the dry orzo. Stir constantly for 2-3 minutes to toast the orzo until lightly golden.
  3. Pour in broth, cream, Italian seasoning, salt, pepper, and red pepper flakes. Stir well, bring to a simmer, then reduce heat to medium-low. Cover and cook for 10-12 minutes, stirring occasionally, until orzo is al dente and liquid is mostly absorbed.
  4. Uncover and stir in fresh spinach in handfuls until wilted. Remove skillet from heat.
  5. Stir in grated Parmesan cheese until melted and sauce is creamy. Taste and adjust seasoning.
  6. Let sit off heat for 2-3 minutes to allow sauce to thicken. Garnish with fresh herbs and extra Parmesan before serving.

Notes

For a silky sauce, always grate your own Parmesan. Add cooked chicken or shrimp for extra protein. Reheat leftovers with a splash of broth or milk. Avoid adding cheese over high heat to prevent separation.
