A comforting one-pan chicken dinner with a rich, savory garlic Parmesan sauce. It comes together quickly for a satisfying weeknight meal that feels like a warm hug.

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour (or cornstarch for gluten-free)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 6-8 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/4 cup chopped fresh parsley

Instructions

  1. Pat chicken dry with paper towels. Season both sides with salt and pepper, then lightly dredge in flour, shaking off excess.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Once butter foams, add chicken. Sear for 5-7 minutes per side until golden and cooked through. Transfer to a plate and tent with foil.
  3. Reduce heat to medium. Add remaining 2 tbsp butter to the skillet. Once melted, add minced garlic and cook for 30-60 seconds, stirring constantly, until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream, Italian seasoning, and a pinch of black pepper. Simmer gently for 3-4 minutes to thicken slightly.
  6. Turn off heat. Gradually whisk in grated Parmesan cheese until fully melted and sauce is smooth.
  7. Return chicken and any juices to the skillet, spooning sauce over the top. Garnish with fresh parsley and serve immediately.

Notes

Use freshly grated Parmesan for a smooth sauce; pre-grated can make it grainy. Do not crowd the pan when searing chicken. Remove skillet from heat before adding cheese to prevent separation.
