This versatile sauce is the perfect partner for more than just chips. It is a bright, herby, and luxuriously smooth sauce that brings life to everything it touches, from baked salmon to grain bowls.

Ingredients

  • 2 ripe avocados, pitted and scooped
  • 1/2 cup fresh cilantro leaves and tender stems, packed
  • 1/4 cup diced white onion
  • 1 jalapeño, seeds removed for mild heat
  • 2 cloves garlic, peeled
  • 1/3 cup plain Greek yogurt or sour cream
  • 3 tablespoons fresh lime juice (about 1 1/2 limes)
  • 1/4 cup water, plus more as needed
  • 1 teaspoon kosher salt, plus more to taste

Instructions

  1. In the bowl of a food processor or blender, combine the avocado, cilantro, onion, jalapeño, and garlic.
  2. Add the Greek yogurt and lime juice to the processor.
  3. Secure the lid and pulse a few times to break down the large pieces.
  4. With the motor running, slowly stream in the 1/4 cup of water through the feed tube. Process until completely smooth and creamy, scraping down the sides once if needed.
  5. Add the kosher salt and blend for another 5 seconds to incorporate.
  6. Taste and adjust seasoning, adding more salt, lime juice, or water as needed to reach your desired consistency and flavor.

Notes

For storage, smooth the salsa in an airtight container and pour a thin layer of lime juice or water over the surface to prevent browning. It will keep for 1-2 days in the refrigerator. Stir before serving.
