  • 1 tablespoon honey
  • 1/4 teaspoon black pepper
  • Pinch of salt
  • 1/2 cup pecans, roughly chopped (for coating)
  • 1/4 cup dried cranberries, roughly chopped (for coating)
  • 2 tablespoons fresh parsley, minced (for coating)

Instructions

  1. Prepare the cheese base: In a medium mixing bowl, combine the softened cream cheese and goat cheese. Using a hand mixer or sturdy spatula, beat until smooth and well combined.
  2. Incorporate flavors: Add the finely chopped cranberries, pecans, parsley, honey, black pepper, and salt to the cheese mixture. Mix until all ingredients are evenly distributed throughout.
  3. Form the ball: Transfer the cheese mixture onto a sheet of plastic wrap. Using the plastic wrap to help shape it, form the mixture into a ball. Twist the plastic wrap tightly around the ball to help maintain its shape during chilling.
  4. Create the coating: While the cheese ball chills, prepare your coating mixture. On a small plate or cutting board, combine the roughly chopped pecans, cranberries, and parsley.
  5. Final coating: After chilling for at least 2 hours, unwrap the cheese ball and roll it in the coating mixture, pressing gently to help the coating adhere. Make sure to cover all sides evenly.
  6. Serve and enjoy: Transfer your finished cranberry pecan goat cheese ball to a serving plate. Let it sit at room temperature for about 20 minutes before serving.
