  • 8 oz log plain goat cheese, softened
  • 4 oz block cream cheese, softened
  • 1/2 cup dried cranberries, finely chopped, plus extra for garnish
  • 1/2 cup pecans, finely chopped, plus extra for coating
  • 2 tablespoons pure maple syrup or honey
  • 1 teaspoon fresh orange zest
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon fine sea salt
  • 1 tablespoon fresh parsley or thyme, minced (optional)

Instructions

  1. Let the goat cheese and cream cheese soften at room temperature for 30 minutes. Finely chop the cranberries and pecans. Zest the orange.
  2. In a medium bowl, combine the softened goat cheese and cream cheese. Blend with a spatula or hand mixer until smooth and creamy.
  3. Add 1/2 cup chopped cranberries, 1/2 cup chopped pecans, maple syrup, orange zest, black pepper, salt, and optional herbs. Gently fold until evenly combined.
  4. Place a large piece of plastic wrap on the counter. Scoop the cheese mixture onto the center. Use the plastic wrap to shape and roll the mixture into a tight ball. Twist the ends to secure.
  5. Refrigerate the wrapped cheese ball for at least 2 hours, or overnight, until firm.
  6. Before serving, spread extra chopped pecans on a plate. Unwrap the chilled cheese ball and roll it in the nuts, pressing lightly to adhere.
  7. Let the coated cheese ball sit at room temperature for 15-20 minutes before serving with crackers, apple slices, or bread.

Notes

For best results, ensure cheeses are fully softened before mixing. The cheese ball can be made up to 3 days in advance; store wrapped in the fridge and coat just before serving. For a dairy-free version, use vegan cream cheese.
