These elegant yet simple appetizers feature creamy brie and sweet-tart cranberry sauce encased in a flaky puff pastry cup. Perfect for holiday gatherings, they are a guaranteed crowd-pleaser that comes together in just 30 minutes.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 (8 oz) wheel brie cheese, well chilled
  • 1/2 cup cranberry sauce
  • 1 large egg, beaten
  • 1/4 cup chopped pecans or walnuts (optional garnish)
  • 1 tbsp fresh rosemary leaves (optional garnish)
  • 1 tsp honey for drizzling (optional garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 24 cup mini muffin tin.
  2. Unfold thawed puff pastry on a lightly floured surface. Roll gently to smooth creases. Cut into 24 equal squares.
  3. Press each pastry square into a prepared muffin cup, letting corners point up. Freeze the tin for 5 minutes.
  4. While pastry chills, cut the chilled brie wheel into 24 small, 1/2 inch cubes.
  5. Remove tin from freezer. Place one brie cube into each pastry cup. Top with 1 teaspoon cranberry sauce.
  6. Brush exposed pastry edges with beaten egg wash.
  7. Bake for 15 to 18 minutes, until pastry is puffed and golden brown.
  8. Let cool in tin for 2 to 3 minutes. Gently transfer to a platter. Garnish with nuts, rosemary, or honey if desired. Serve warm.

Notes

Keep brie cold for easy cutting. Do not overfill cups. Leftovers can be refrigerated and reheated in a 350°F oven to crisp. Unbaked bites can be frozen and baked from frozen, adding 3 to 5 extra minutes.
