A hearty one-pan breakfast that transforms leftover or canned corned beef into a savory feast with crispy potatoes, peppers, and creamy scrambled eggs. It is a family-friendly meal perfect for a special weekend brunch or a quick, satisfying start to the day.

  • 1 tablespoon olive oil or butter
  • 1 medium yellow onion, diced
  • 1 red or green bell pepper, diced
  • 2 cups diced russet or Yukon gold potatoes (about 2 medium potatoes, 1/2-inch dice)
  • 2 cups cooked corned beef, chopped or shredded (about 12 oz)
  • 6 large eggs
  • 2 tablespoons milk or water
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for serving
  • Hot sauce or ketchup, for serving

Instructions

  1. Heat oil or butter in a large skillet over medium heat. Add diced onion and bell pepper. Cook for about 5 minutes, stirring occasionally, until softened and fragrant.
  2. Add diced potatoes to the skillet. Spread in an even layer and cook undisturbed for 4-5 minutes to sear. Stir and continue cooking for 8-10 minutes, stirring occasionally, until potatoes are tender and golden brown. Season with a pinch of salt and pepper.
  3. Stir in chopped corned beef and smoked paprika (if using). Cook for 3-4 minutes, letting the beef heat through and get slightly crispy.
  4. While hash cooks, whisk eggs, milk, and a pinch of salt and pepper in a bowl until well combined.
  5. Push the corned beef hash mixture to one side of the skillet. Pour the beaten eggs into the empty space.
  6. Let eggs set for 30 seconds, then gently stir, gradually incorporating the hash mixture. Continue folding and stirring for 2-3 minutes until eggs are softly set and creamy. Remove from heat just before they look fully done.
  7. Spoon scramble onto plates. Garnish with fresh parsley and serve immediately with hot sauce or ketchup.

Notes

For crispier potatoes, do not stir them too frequently after adding to the pan. For creamier eggs, remove the skillet from the heat just before they are fully set, as they will continue to cook. You can use frozen diced hash browns for a quicker cook time.
