Ingredients

Scale
  • 1 package (12 count) Hawaiian sweet rolls or potato rolls
  • 1 pound lean ground beef
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 6 slices American cheese, cut in half
  • 1/2 cup dill pickle slices
  • 1 cup shredded iceberg lettuce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat oven to 350°F (175°C). Slice the entire sheet of rolls in half horizontally. Place the bottom half in a 9×13 inch baking dish.
  2. Make the sauce by whisking together mayonnaise, relish, mustard, vinegar, paprika, 1/2 tsp onion powder, and 1/4 tsp garlic powder in a small bowl. Set aside.
  3. In a skillet over medium-high heat, cook the ground beef, breaking it up. Season with salt, pepper, 1 tsp onion powder, and 1/2 tsp garlic powder. Cook until no pink remains, about 7-8 minutes. Drain excess grease.
  4. Spread half of the sauce over the bottom layer of rolls. Spoon the cooked beef evenly over the sauce. Layer with halved cheese slices, pickle slices, and shredded lettuce. Drizzle the remaining sauce over the lettuce. Place the top half of the rolls on top.
  5. In a small bowl, mix the melted butter with 1/2 tsp onion powder. Brush this mixture over the top of the rolls. Sprinkle with sesame seeds.
  6. Cover the dish loosely with foil and bake for 15 minutes. Remove foil and bake for an additional 5-7 minutes, until rolls are golden and cheese is melted.
  7. Let cool for 2-3 minutes, then use a sharp knife to cut between rolls into individual sliders. Serve warm.

Notes

For a lighter version, use ground turkey or light mayo. The sauce can be made up to 5 days ahead. Letting the sliders cool briefly before slicing helps them hold together. Store leftovers in the fridge for up to 3 days.
