These creamy Coconut Lime Popsicles are a refreshing tropical treat made with simple ingredients. They come together in minutes and are perfect for cooling off on hot summer days. Naturally dairy-free and gluten-free, they taste like a vacation in every bite.

  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup fresh lime juice (about 4-5 limes)
  • 1/3 cup honey or maple syrup
  • 1 teaspoon lime zest
  • 1/4 cup shredded unsweetened coconut (optional)
  • Pinch of sea salt

Instructions

  1. Zest the limes before juicing them. Set zest aside. Juice limes to get 1/2 cup fresh juice; strain out seeds.
  2. In a blender, combine coconut milk, lime juice, honey or maple syrup, lime zest, and a pinch of salt. Add shredded coconut if using. Blend on high for 30 seconds until smooth.
  3. Taste the mixture and adjust sweetness or lime flavor as needed. Remember freezing dulls sweetness slightly.
  4. Pour mixture into popsicle molds, leaving about 1/4 inch space at the top for expansion. Tap molds gently to release air bubbles.
  5. Insert popsicle sticks. If molds have covers, secure them. If not, freeze for 1 hour then insert sticks once mixture starts to firm.
  6. Freeze for at least 4 hours, preferably overnight, until completely solid.
  7. To unmold, run the outside of molds under warm water for 10-15 seconds. Gently pull on sticks to release. Serve immediately.

Notes

For best texture, use full-fat coconut milk. Light coconut milk will result in icier popsicles. Adjust sweetness to taste. For a tropical twist, replace half the coconut milk with pineapple juice or mango puree.
