  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 3/4 cups whole milk
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your waffle iron according to its instructions. Lightly grease it with butter or cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the room-temperature eggs until frothy. Whisk in the milk, cooled melted butter, and vanilla extract until well combined.
  4. Create a well in the center of the dry ingredients. Pour the wet mixture into the well. Gently fold together with a spatula until just combined; do not overmix. A few small lumps are okay.
  5. Let the batter rest for 5 minutes.
  6. Pour the recommended amount of batter (about 1/2 to 2/3 cup) onto the center of the hot waffle iron. Close the lid and cook until steam slows and the waffle is deeply golden brown and crisp.
  7. Serve the waffles immediately.

Notes

For best results, avoid overmixing the batter and do not open the waffle iron too early. Leftover waffles can be cooled, frozen in a single layer, and reheated in a toaster for a quick breakfast.
