Ingredients

Scale
  • For the Sugar Cookie Crust:
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • For the Cream Cheese Frosting:
  • 8 ounces full-fat cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • For the Fruit Topping:
  • 2-3 cups assorted fresh fruit (e.g., strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat oven to 350°F. Grease a 12-inch pizza pan or large baking sheet.
  2. Make the crust: In a large bowl, cream butter and sugar until light and fluffy, 2-3 minutes. Beat in egg and vanilla.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet ingredients, mixing until a soft dough forms.
  4. Press dough evenly into prepared pan. Prick all over with a fork. Bake 12-15 minutes until edges are lightly golden. Cool completely.
  5. Make the frosting: Beat softened cream cheese and butter until smooth. Gradually add sifted powdered sugar, vanilla, and salt. Beat 2-3 minutes until fluffy.
  6. Assemble: Spread frosting evenly over cooled crust. Arrange washed and thoroughly dried fruit on top.
  7. Refrigerate for at least 30 minutes before slicing. Serve chilled.

Notes

Ensure crust is completely cool before frosting. Fruit must be dry to prevent a soggy crust. Components can be made 1-2 days ahead. Best enjoyed within 4-6 hours of assembly.
