This is the perfect weeknight recipe for warm, gooey chocolate chip cookies. They come together quickly with pantry staples and feature a crisp edge with a soft, chewy center. A brief chill in the freezer ensures perfect texture every time.

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Cream the softened butter, brown sugar, and granulated sugar in a large bowl on medium speed for 2-3 minutes until light and fluffy.
  2. Beat in the eggs one at a time, then mix in the vanilla extract. Scrape down the sides of the bowl.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined.
  5. Use a spatula to gently fold in the chocolate chips until evenly distributed.
  6. Cover the dough and chill in the freezer for 15-20 minutes. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  7. Scoop dough into 2-tablespoon balls and place them 2 inches apart on the prepared sheets.
  8. Bake for 10-12 minutes, until edges are golden brown and centers look set.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. Do not overmix the dough after adding flour. Cookies will continue to set as they cool. Dough balls can be frozen for later baking.
