This is the ultimate no-stress comfort food recipe. Using just one bowl and a fork, it transforms spotty bananas into a moist, fragrant loaf perfect for any time of day.

  • 3 ripe bananas (about 1 1/2 cups mashed)
  • 1/3 cup (75g) melted butter or neutral oil
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until mostly smooth.
  3. Stir in the melted butter, sugar, egg, and vanilla until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet mixture. Fold gently with a spatula until no dry streaks remain. Do not overmix. Fold in optional add-ins if using.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 55 to 65 minutes, until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use very ripe, spotty bananas. Let the loaf cool completely for clean slices. Store wrapped at room temperature for 3-4 days, or freeze for up to 3 months.
