These bite-sized churros deliver all the classic fairground flavor in a fraction of the time. Crispy on the outside, tender inside, and coated in warm cinnamon sugar, they are the perfect quick treat for sharing.

  • 4 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 3 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • Vegetable, canola, or peanut oil for frying (about 4-6 cups)

Instructions

  1. Make the dough base: In a medium saucepan, combine water, butter, 1 tablespoon sugar, and salt. Bring to a rolling boil. Reduce heat to low and immediately add all the flour at once. Stir vigorously with a wooden spoon for 1-2 minutes until a smooth ball forms that pulls away from the pan sides.
  2. Cool the dough: Transfer the hot dough to a mixing bowl and let cool for 5 minutes.
  3. Add eggs and vanilla: Using a hand mixer or stand mixer, beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Beat in the vanilla extract until dough is smooth, sticky, and glossy.
  4. Heat oil and prep coating: Pour oil into a heavy pot to a depth of about 2 inches. Heat over medium heat to 350-375°F (175-190°C). In a wide, shallow bowl, whisk together 1 cup sugar and cinnamon.
  5. Fry the bites: Carefully drop teaspoon-sized portions of dough into the hot oil, frying in batches of 6-8 to avoid overcrowding. Fry for 2-4 minutes, turning occasionally, until puffed and deep golden brown.
  6. Drain and coat: Remove bites with a slotted spoon and drain on a paper towel-lined plate for 30 seconds. While still very warm, roll each bite in the cinnamon sugar mixture until thoroughly coated.
  7. Serve immediately while warm and crispy.

Notes

For accuracy, use a candy/deep-fry thermometer to maintain oil temperature. Let the dough base cool fully before adding eggs to prevent scrambling. The cinnamon sugar adheres best to warm bites, so coat them promptly after draining. For a baked version, bake spoonfuls at 400°F for 18-22 minutes, then coat.
