A festive and healthy Christmas tree shaped vegetable platter that serves as a beautiful centerpiece for holiday gatherings. This colorful arrangement features crisp broccoli, cucumbers, cherry tomatoes, and bell peppers arranged in an evergreen tree shape, perfect for balancing out richer holiday foods.

Ingredients

  • 1 large head broccoli, cut into florets
  • 2 English cucumbers, sliced into rounds
  • 1 pint cherry tomatoes, halved
  • 2 yellow bell peppers, cut into thin strips
  • 1 orange bell pepper, cut into thin strips
  • 1 small head cauliflower, cut into small florets
  • 6-8 baby carrots
  • 1 yellow bell pepper slice for star
  • Optional: Ranch dip, dill yogurt dip, or sriracha lime crema for serving

Instructions

  1. Wash and thoroughly dry all vegetables. Cut broccoli into small and medium florets. Slice cucumbers into 1/4-inch thick rounds. Halve cherry tomatoes. Cut bell peppers into thin strips. Cut cauliflower into very small florets for snow.
  2. Cut a star shape from a slice of yellow bell pepper for the tree topper.
  3. Choose a large rectangular or oval platter. Start at the bottom by arranging a straight, dense row of broccoli florets to create the widest part of the tree.
  4. Build upwards by adding rows of broccoli, each row slightly shorter than the last, to form a triangle shape. Use cucumber slices to fill in any gaps between broccoli rows.
  5. Weave yellow and orange bell pepper strips between the broccoli rows to create garlands. Place halved cherry tomatoes throughout the tree as ornaments.
  6. Create the trunk at the bottom center using baby carrots. Gently place the bell pepper star at the very top of the tree.
  7. Scatter small cauliflower florets around the base of the trunk to look like snow. Serve with your favorite dip placed at the base as a present.

Notes

For best results, prep vegetables up to two days ahead and store in separate airtight containers with paper towels to absorb moisture. Assemble just before serving. Avoid adding salt to vegetables ahead of time as it will draw out moisture and cause wilting. Customize with additional vegetables like radishes, snap peas, or cheese cubes for extra decorations.
