Instructions

  1. Make the crust: Process cookies into fine crumbs. Mix with melted butter until it resembles wet sand. Press firmly into a 9-inch pie plate. Freeze for 10-15 minutes.
  2. Make the peanut butter layer: Beat cream cheese and peanut butter until smooth. Beat in powdered sugar and vanilla. Fold in half of the whipped topping until combined. Spread evenly into the chilled crust. Freeze for 30 minutes.
  3. Make the chocolate ganache: Place chocolate chips in a heatproof bowl. Heat milk until simmering, then pour over chips. Let sit 2-3 minutes, then whisk until smooth. Cool for 10-15 minutes until pourable but not hot.
  4. Assemble the pie: Pour cooled ganache over the set peanut butter layer. Freeze for 1 hour. Spread the remaining whipped topping over the set chocolate layer.
  5. Freeze completely: Freeze the pie for at least 4-6 hours, or ideally overnight, before serving for clean slices.

For clean slices, let pie sit at room temperature for 5-10 minutes before cutting with a hot knife. Ensure cream cheese is fully softened to avoid lumps. Store tightly wrapped in the freezer for up to 2-3 months.
