These chocolate dipped cherries are a decadent yet mindful treat. They combine juicy fresh cherries with a glossy dark chocolate shell for a perfect two-bite indulgence that is simple to make and elegant to serve.

  • 1 pound fresh cherries with stems intact
  • 8 ounces high-quality dark chocolate, chopped
  • 1 teaspoon coconut oil
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Wash cherries and pat them completely dry with a clean kitchen towel. Line a baking sheet with parchment paper.
  2. Create a double boiler by placing a heatproof bowl over a small pot of simmering water, ensuring the bowl bottom does not touch the water.
  3. Add chopped chocolate and coconut oil to the bowl. Stir gently and constantly with a rubber spatula until completely melted, smooth, and glossy. Remove from heat.
  4. Holding a cherry by its stem, dip it into the melted chocolate, swirling to coat about three-quarters of the way up. Let excess chocolate drip back into the bowl.
  5. Place the dipped cherry onto the parchment-lined sheet. If using, immediately sprinkle with a tiny bit of flaky sea salt.
  6. Repeat with remaining cherries. If chocolate thickens, briefly return bowl to the warm water to loosen.
  7. Place the baking sheet in the refrigerator for about 20 minutes, or until the chocolate coating is completely firm to the touch.

Notes

Ensure cherries are completely dry to prevent chocolate from seizing. For a dairy-free version, use certified dairy-free dark chocolate. Store in an airtight container in the refrigerator for up to 5 days.
