This creamy chicken salad combines tender chicken, juicy red grapes, and buttery toasted pecans for a perfect balance of flavors and textures. Fold in the grapes and pecans just before serving to keep them crisp and fresh. Ideal for sandwiches, lettuce wraps, or as a salad topper.

  • 4 cups cooked chicken, shredded or diced (rotisserie chicken works beautifully)
  • 1 cup red seedless grapes, halved
  • 3/4 cup pecans, toasted and roughly chopped
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, minced (optional)
  • 1/2 cup mayonnaise (full-fat gives the best texture)
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F. Spread pecans on a baking sheet and toast for 5-7 minutes until fragrant and slightly darker. Let cool completely, then roughly chop.
  2. If using rotisserie chicken, remove skin and shred meat into bite-sized pieces. If cooking from scratch, season boneless breasts with salt and pepper, bake at 375°F for 20-25 minutes until cooked through, then let cool completely before dicing.
  3. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, pepper, and garlic powder. Taste and adjust seasoning.
  4. In a large bowl, combine cooled chicken, celery, and red onion. Pour dressing over and stir gently until well coated.
  5. Cover and refrigerate for at least 30 minutes to let flavors meld.
  6. Just before serving, fold in the halved grapes and toasted pecans. Serve immediately for best texture.

Notes

Store the chicken-dressing base separately from grapes and pecans for up to 4 days. Add grapes and pecans fresh each time you serve to maintain crunch. For a lighter version, replace half the mayo with extra Greek yogurt or mashed avocado. For nut-free, substitute pecans with toasted sunflower seeds or pumpkin seeds.
