  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups raisins

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar with a mixer on medium speed for 2-3 minutes until light and fluffy.
  3. Beat in the eggs one at a time until fully incorporated. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. With mixer on low, gradually add the flour mixture to the butter mixture. Mix just until combined.
  6. Using a spatula, fold in the rolled oats and raisins by hand until evenly distributed.
  7. Drop rounded 1.5-tablespoon portions of dough onto the prepared sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, until edges are lightly golden but centers look soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For plump raisins, soak them in hot water for 10 minutes then drain and pat dry before using. Do not overbake; the cookies will set as they cool on the pan. Store in an airtight container with a piece of bread to maintain softness.
