A hearty one-pan meal featuring crispy potatoes and smoky sausage coated in tangy ranch seasoning and melted cheese. It is a simple, comforting dinner perfect for busy nights.

  • 2 pounds baby red or Yukon Gold potatoes, cut into 1-inch chunks
  • 1 pound (14 oz) smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 (1 oz) packet dry ranch seasoning mix
  • 2 cups shredded cheddar cheese or cheddar-Jack blend
  • Chopped fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine potato chunks, sausage rounds, olive oil, and ranch seasoning. Toss until evenly coated.
  3. Transfer mixture to a 9×13 inch baking dish or large rimmed sheet pan, spreading into a single layer.
  4. Roast for 30 minutes, or until potatoes are fork-tender and starting to brown.
  5. Remove from oven and sprinkle shredded cheese evenly over the top.
  6. Return to oven and bake for an additional 10-15 minutes, until cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

For crispier potatoes, ensure they are in a single layer and not crowded. You can use turkey sausage or add vegetables like broccoli or bell peppers. Shredding your own cheese from a block gives a smoother melt.
