  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 10 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon dry mustard powder
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Cooking spray or butter for greasing
  • Chopped fresh chives or parsley for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook sausage until browned, breaking it up. Add onion and bell pepper; cook until softened, 5-7 minutes. Drain excess grease and set aside to cool.
  3. Spread thawed hash browns evenly in the prepared baking dish. Top with the sausage mixture, 1 1/2 cups cheddar cheese, and all the Monterey Jack cheese.
  4. In a large bowl, whisk eggs until frothy. Whisk in milk, cream, dry mustard, garlic powder, salt, and pepper until smooth.
  5. Pour the egg mixture evenly over the layers in the dish. Gently press down any floating bits. Sprinkle with remaining 1/2 cup cheddar cheese.
  6. Bake, uncovered, for 55 to 65 minutes, until the center is set and the top is golden brown. A knife inserted should come out clean.
  7. Let the casserole rest for 10-15 minutes before slicing. Garnish with fresh chives and serve.

For a make-ahead option, assemble the casserole, cover, and refrigerate overnight (up to 12 hours). Let sit at room temperature for 20-30 minutes before baking.
