This is the ultimate party appetizer, a warm, tangy, and comforting blend of tender chicken, creamy cheese, and iconic buffalo kick. It’s a hands-off, slow-cooked dip that’s perfect for game day, movie night, or any gathering.

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 ounces full-fat block cream cheese, softened
  • 1/2 cup buffalo sauce (like Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced
  • For serving: tortilla chips, celery sticks, carrot sticks

Instructions

  1. Lightly grease the inside of a 2 to 4-quart slow cooker insert.
  2. Add the softened cream cheese, ranch dressing, sour cream, and buffalo sauce to the crockpot. Stir to begin combining.
  3. Stir in the shredded chicken, 3/4 cup of the cheddar cheese, and 3/4 cup of the Monterey Jack cheese. Reserve the remaining cheese.
  4. Cover and cook on LOW for 1 hour.
  5. After 1 hour, stir the dip well until smooth.
  6. Sprinkle the reserved cheese evenly over the top of the dip.
  7. Re-cover and cook on LOW for another 15-30 minutes, or until the cheese on top is melted and bubbly and the dip is heated through.
  8. Stir the melted top cheese into the dip, then garnish with sliced green onions. Serve immediately from the crockpot set to WARM.

Notes

For the creamiest texture, shred your own cheese from a block. You can use rotisserie chicken for a shortcut. Adjust the amount of buffalo sauce to control the heat level. If in a hurry, cook on HIGH for 45-60 minutes, stirring every 20 minutes.
