  • 1 pound thick-cut bacon, chopped
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 12 large eggs
  • 1 cup whole milk
  • 1 cup sour cream
  • 1 (1-ounce) packet dry ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 (30-32 oz) bag frozen shredded hash browns, thawed
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • Fresh chives or green onions, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon to a paper towel-lined plate, reserving about 2 tablespoons of bacon fat in the skillet.
  3. Add the diced onion and bell pepper to the skillet with the bacon fat. Sauté until softened, about 5-7 minutes. Remove from heat.
  4. In a very large mixing bowl, whisk the eggs, milk, sour cream, ranch seasoning, garlic powder, and black pepper until completely smooth.
  5. To the bowl with the egg mixture, add the thawed hash browns, cooked bacon (reserve a small handful for topping), sautéed onions and peppers, 1 1/2 cups of the cheddar cheese, and all of the Monterey Jack cheese. Fold everything together until evenly combined.
  6. Pour the mixture into the prepared baking dish and spread into an even layer. Top with the remaining 1/2 cup of cheddar cheese and the reserved bacon bits.
  7. Bake for 55 to 65 minutes, or until the center is fully set and the top is golden brown. A knife inserted in the center should come out clean.
  8. Let the casserole rest for 10 minutes before slicing. Garnish with chopped fresh chives or green onions and serve.

Notes

For a make-ahead option, assemble the casserole the night before, cover, and refrigerate. Add 5-10 minutes to the bake time if cooking straight from the fridge. Ensure hash browns are fully thawed to prevent a watery casserole. Letting the casserole rest after baking is crucial for clean slices.
