These soft, fluffy rolls are packed with sharp cheddar and fresh herbs. They are the perfect homemade side to elevate any meal, from a simple weeknight soup to a festive holiday spread. Simple to make and freezer-friendly, they deliver warm, comforting flavor with minimal fuss.

  • 3 cups all-purpose flour, plus more for dusting
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast (one standard packet)
  • 1 teaspoon kosher salt
  • 1 cup warm whole milk (about 110°F)
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1 large egg, at room temperature
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/4 cup finely chopped fresh herbs (such as parsley and chives)
  • 1 tablespoon melted butter for brushing, optional

Instructions

  1. Make the dough. In the bowl of a stand mixer fitted with a dough hook, combine the flour, sugar, yeast, and salt. Add the warm milk, melted butter, and egg. Mix on low until combined, then knead on medium for 5-7 minutes until smooth and elastic.
  2. Incorporate cheese and herbs. With the mixer on low, gradually add the shredded cheddar and chopped herbs. Mix just until evenly distributed. The dough will be soft and slightly sticky.
  3. First rise. Place dough in a lightly greased bowl, turning to coat. Cover with a towel or plastic wrap and let rise in a warm spot until doubled, about 1 hour.
  4. Shape the rolls. Punch down the dough and turn it out onto a lightly floured surface. Divide into 12 equal pieces. Shape each piece into a smooth ball by rolling gently under your cupped hand.
  5. Second rise. Place shaped rolls in a greased 9×13 inch baking dish or on a parchment-lined baking sheet, spaced about an inch apart. Cover and let rise until puffy and nearly doubled, 30-45 minutes.
  6. Bake. Preheat oven to 375°F (190°C). Bake rolls for 18-22 minutes until golden brown and they sound hollow when tapped. If desired, brush hot rolls with optional melted butter. Let cool in pan for 5 minutes before serving warm.

Notes

For best results, use freshly shredded cheese from a block. Ensure milk is warm but not hot to activate the yeast. To freeze, cool rolls completely, freeze solid on a tray, then transfer to a bag. Reheat from frozen, wrapped in foil, at 350°F for 10-15 minutes.
