A decadent, make-ahead breakfast bake featuring layers of custard-soaked bread, caramel, and spiced apples. Perfect for a cozy, fuss-free morning that feels special.

  • 1 loaf (16 oz) hearty bread like challah or brioche, cut into 1-inch cubes
  • 3 large eggs
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ⅓ cup pure maple syrup or packed brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • 2 medium apples (Honeycrisp or Granny Smith), peeled and thinly sliced
  • ½ cup caramel sauce or dulce de leche, plus more for serving

Instructions

  1. Generously butter a 9×13 inch baking dish. Scatter half the bread cubes evenly in the bottom.
  2. Arrange the sliced apples over the bread. Drizzle half the caramel sauce over the apples. Top with remaining bread cubes.
  3. In a large bowl, whisk eggs, milk, cream, maple syrup, vanilla, cinnamon, nutmeg, and salt until smooth.
  4. Slowly pour custard over the layered bread and apples. Press down gently with a spatula to ensure all bread is soaked. Drizzle remaining caramel sauce over top.
  5. Cover dish tightly with plastic wrap. Refrigerate for at least 4 hours, or ideally overnight.
  6. Preheat oven to 350°F (175°C). Remove plastic wrap. Bake for 45-50 minutes until top is golden brown, edges are crisp, and center is set.
  7. Let cool for 5-10 minutes. Slice and serve warm with extra caramel sauce.

Notes

Use day-old, sturdy bread for best texture. Do not skip the overnight soak. For a dairy-free version, substitute milk and cream with full-fat canned coconut milk.
