These Brownie Bites are fudgy, poppable mini treats with a crackly top. They come together quickly with pantry staples and are perfect for sharing. The key is using a high-quality dark cocoa powder for deep chocolate flavor.

Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup high-quality unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a mini muffin pan.
  2. In a large bowl, whisk melted butter and sugar until combined. Add eggs and vanilla, whisk vigorously for 1 minute until smooth and pale.
  3. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  4. Add dry ingredients to wet ingredients. Fold gently with a spatula until just combined. Fold in chocolate chips.
  5. Divide batter evenly among prepared mini muffin cups, filling each about 3/4 full.
  6. Bake for 12-15 minutes, until tops look set and a toothpick inserted comes out with a few moist crumbs.
  7. Cool in pan on a wire rack for 10 minutes. Run a small knife around edges to loosen and remove. Cool completely on rack.

Notes

For best results, do not overmix batter or overbake. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Gluten-free and dairy-free substitutions work well.
